Peach Co-Fermented Jairo Arcila – Single Origin

Grown by Jairo Arcila at Finca Santa Mónica in Armenia, Quindío, this Castillo micro-lot underwent a 48-hour dry anaerobic fermentation with ripe preaches added to the tank. After fermentation, the coffee was gently washed and dried on raised beds below 35°C until optimal moisture was reached.

The Castillo variety was developed by Colombia's National Coffee Federation for its resilience and high yield, and thrives in the region's volcanic and high altitudes.
