Grown in Araponga region of Matas de Minas, Brazil, this coffee thrives in the rich biodiversity of the Atlantic Forest. The area's high altitudes, diverse microclimates, and red latosol soil create the perfect conditions for producing complex, high-quality coffee.
Each plot experiences its own subtle climate variations, giving rise to unique flavour nuances in every harvest.
This lot was sorted by density, then dried on raised beds. For the first two days, the cherries were left in thick layers to encourage gentle, natural fermentation. Once partially dried, the layers were spread thinner and covered to ensure a slow, even finish – a 10-day process in total.
